BREAKFAST SOUFFLE
Norma Rich

Ingredients:
12 slices bread
2 cups shredded cheese
2 cups ham
3 cups milk
6 eggs
½ tsp. salt
¼ tsp. pepper

Instructions:
1.  Grease 9”x 13” pan.
2.  Combine:  eggs, milk, salt and pepper.
3.  Layer in order:  bread, cheese, egg mixture and top with ham.  Cover and refrigerate over night.
4.  Bake at 350° for 45 minutes (covered).  Uncover last 15 minutes baking.  Let stand a few minutes.
5.  Slice and serve.

NORMA’S & ETHEL’S BREAKFAST CHEESECAKE

Ingredients:
2 cans crescent rolls
2 (8oz.) pkgs. Cream cheese
1 egg yolk
1 cup sugar
½ cube butter
1½ cups almond paste
1 tsp. almond extract
1 egg white beaten
¼ cup sugar
¾ cup chopped almonds

Instructions:
1.  Soften cream cheese, butter and crumble almond paste.
2.  Beat together:  cream cheese, butter, almond paste, egg yolk, sugar, and almond extract.
3.  Lightly spray 9“x 13” pan.
4.  Spread 1 can crescent rolls in bottom of pan.
5.  Spread cream cheese mixture on rolls, and then top with remaining can of rolls.
6.  Brush on egg white, sprinkle sugar over egg white and then sprinkle on chopped almonds.
7.  Bake at 350° for 25-30 minutes.

OATMEAL PANCAKES

Ingredients:
2 eggs
4 Tbs. Vegetable oil or melted butter
1¾ cups buttermilk
1 cup all-purpose flour
1 cup quick rolled oats
3 Tbs. Brown sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt

Instructions:
Beat eggs in bowl.  Beat in vegetable oil until mixed.  Stir in buttermilk.  Add rest of ingredients and stir to blend.  There may be lumps in batter.  Spoon about ¼ cup of the batter into hot skillet.  Serve with butter and your choice of syrups.VERY GOOD!

Quiche

Ingredients:
1 stack soda crackers (about 14)
8 oz. of grated Swiss (or Jack) cheese
1 tbs. diced onions
1 tbs. diced green peppers
3 or 4 eggs
1 cup cottage cheese
Some onion powder

Instructions:
Place broken soda crackers in pie pan. Spread the grated cheese over top of the crackers. Sprinkle the diced onions and diced green peppers over the cheese. Blend eggs and cottage cheese in blender- use some onion powder. Pour over cheese and bake at 350° for 25 minutes (or longer)
VERY EASY & VERY GOOD!
